Lemon in pasta? That must taste totally sour! No. It tastes wonderfully fresh and light, despite the cream in the sauce. I love this dish especially on hot summer days. Pasta al Limone is a classic Italian dish popular for its creamy, tangy and refreshing taste. The sauce is made with simple ingredients like pasta, butter, cream, parmesan cheese and of course lemon. The lemon juice and zest give this dish a very special flavor boost.

Ingredients
1 organic lemon
250 ml cream/whipped cream
1 tablespoon butter
2 handfuls grated parmesan
salt and pepper | Tip: Use freshly ground black pepper
Pasta of your choice (we used bavette)
Preparation
Peel two strips from the lemon, cut the peel long into fine strips. Squeeze the lemon, put the juice aside. Grate lemon zest and place in a pan. Over medium heat, add cream/whipped cream, simmer for 2-3 minutes. Add butter, simmer for a few minutes until creamy consistency. Add a splash of pasta water to sauce, add cooked pasta and gradually add Parmesan cheese and lemon juice. Stir until the sauce is creamy and thick. Add salt and (especially) pepper to taste.
